USA: Hunter Henry’s life has been shaped by a relentless series of medical battles that began at birth with hypoplastic left heart syndrome. He underwent three open‑heart operations before turning two and later learned he had a hearing impairment discovered during one of those surgeries, leading to long‑term use of hearing aids. By adolescence, fluid retention forced him onto a no‑sodium regimen and then a low‑sodium diet as doctors tried to manage his failing circulation.

As his condition progressed, Hunter required a heart transplant and spent four and a half years at Texas children’s Hospital awaiting a donor. He eventually received a new heart, but complications followed when he experienced a stroke while under anesthesia for surgery. Facing repeated procedures and prolonged hospital stays, Hunter turned to the kitchen as a form of focus and therapy, adapting flavors to fit strict sodium limits and to brighten hospital meals.

Uncle Hunter’s Seasoning has begun to appear in regional stores, including Nunu’s in the Maurice area, Earl’s, Fresh Pickin’s, and Kartchner’s in Youngsville. Hunter is actively expanding distribution and asking for community support for his family and the fledgling business.
